Egg and Avocado Salad

Ingredients

• 4 hard-boiled eggs (chopped)

• 2 ripe avocados (diced)

• 1/4 red onion (finely chopped)

• 1 tbsp lemon juice

• 2 tbsp mayo (or Greek yogurt)

• Salt & pepper

• Fresh cilantro or parsley (optional)

Steps

1. Boil eggs 10 min, cool, peel, chop.

2. Dice avocados, mix with lemon juice to prevent browning.

3. Combine eggs, avocado, onion, mayo, salt, pepper.

4. Stir gently, top with herbs if using.
