Low Carb Cauliflower Pizza

Ingredients

• 1 medium cauliflower head (about 4 cups grated)

• 1 cup shredded mozzarella cheese

• 1 large egg

• 1 tsp Italian seasoning (optional)

• Salt & pepper to taste

• Pepperoni slices

• Extra mozzarella or parmesan for topping

Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

2. Grate cauliflower, microwave 5 minutes, then squeeze out all water using a clean towel.

3. Mix dry cauliflower with egg, 1 cup mozzarella, seasoning, salt, pepper.

4. Press into a 10-inch circle on parchment. Bake 18-20 minutes until golden.

5. Add pepperoni and extra cheese. Bake 8-10 more minutes until bubbly.

6. Let cool 5 minutes, slice, serve.

Carbs: ~8g net per slice (4 slices total) – no sugar spikes, tastes like real pizza.
